Mocha Peanut Bites: Refined sugar, gluten and dairy free!

Our lovely brand ambassador Plant.steph has created this amazing snack to help power us through our refined sugar-free week! If you’re looking for a healthy treat which will indulge your taste buds, then this simple, no-bake recipe is the perfect snack – especially if you’re craving something sweet and chocolatey but without the naughtiness. Steph has used crunchy peanut butter and raw cacao to create a rich, textured heavenly tasting ball of delight.

Our very own Chocolate Caramel infused instant coffee is a perfect match for these bites, but alternatively you could use French Vanilla or any other flavour for that matter! This recipe takes next to no time to make, the hardest part is waiting for them to chill in the fridge for an hour!

Ingredients

½ cup crunchy peanut butter
3tbsp peanut flour
1tbsp cacao powder
2tbsp fruit syrup
1tsp Little’s Chocolate Caramel instant coffee mixed with 1tbsp hot water

Chocolate Coating

1tbsp coconut oil
1tbsp cacao powder
1tbsp coconut sugar

Method

1. Start by mixing together all the ingredients in a bowl to form a ‘dough’.

2. Then in your hands, shape into approximately 10 balls, chill in the fridge for about an hour (We know, it’s hard to wait that long!)

3. To make the delicious chocolate coating, melt the coconut oil in the microwave and stir in the cacao and coconut sugar.

4. You’ll have to be quick for this bit: dip and coat each ball in the sauce and pop on the tray.

5. Return to the fridge for another hour before tucking in!
